Pecan Cranberry Energy Bites

I'll be honest, "hangry" could have very well been invented by my husband to describe me in the unfed state! No joke... I eat all day long! Snacking is okay and, for some people, I would encourage it. A satisfied tummy helps your brain make better food choices. Snacking helps me regulate how much I actually eat at meals. Along with my meals, my lunchbox is filled with healthy snacks like fruits, veggies, nuts, and recently these little energy bites! I find them to be the perfect snack before I hit the gym. They're filled with the perfect amount of protein, carb, and fat to fuel my workout. They don't have any of the filler ingredients that prepackaged energy bars have, and they taste way better. The best part? They take less than 5 minutes to make!
Ingredients:
- 1 Cup quick oats
- 1/2 cup dried cranberries
- 1/2 cup chopped pecans
- 1/4 cup honey
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 cup almond butter (any nut butter will work)
- 1/4 tsp salt
Directions:
- Using a spatula, mix all ingredients in a large bowl until well combined.
- Using your hands, mold large spoonfuls (~1.5 TBS) of the mixture into a ball. Place them onto a parchment paper lined cookie sheet and refrigerate for 15-30 minutes.
- Storage recommendation: Store them in an airtight container, in the refrigerator, for up to a week and a half. If you're taking them with you, they are fine if left unrefrigerated for the day.
